Five Favorite Instant Pot Dinner Recipes

My boys love robots, playing with robots, talking about robots, building robots, if it has the name robot on it, they will like it, even if it is a simple T-shirt.

Not my thing, I used to think, I enjoy the old fashioned way of things when you actually do the work with your own hands. But I have started to consider the beauty of having little electronic helpers making my life easier around here.

Of course, I already own machines that work for me like my washing machine, microwave, dishwasher and the other hundred gadgets spread around the house. Why not welcome more? All my barriers came down when I used the Instant Pot.

The one I own is actually from Cosori, same system, a little more affordable. What a life changer! Fill up with ingredients, press a few buttons, dinner is done! Eggs cooked to perfection without the troubles of babysitting boiling water.

The best of all is that because it behaves so much like a robot my boys enjoy learning how to cook in the Instant Pot. How cool is this kid who makes cooking YouTube videos using the Instant Pot? 

Here are my Five Favorite Weeknights Instant Pot Recipes:

1. Chicken Tikka Masala - I use this spice mix to shortcut the recipe.

2. Slow Cooker Turkey Quinoa Chili with Sweet Potatoes and Black Beans - I use this slow cooker recipe but it is basically the same for the Instant Pot. Use the saute option for the first ingredients and then after adding all the other ingredients, use the poultry option. I have made this recipe with ground beef and it also works great.

3. Split Pea Soup - Perfect for a cold and rainy evening or when you don't have time to make a three-course dinner. 

4. Thai Butternut Squash Red Curry - Coconut milk has so many health benefits that I love adding it to recipes at least once a week. 

5. Steak Fajitas - You can make a Fajita bar with different toppings like beans, salsa, corn, guacamole, cilantro, lettuce and sour cream.
